Venison Steak with Syrah Jus & Rosemary Potatoes
Ingredients (serves 4):
- 800 g venison loin (trimmed)
- Salt & freshly ground pepper
- 2 tbsp olive oil
- 1 sprig rosemary
- 1 sprig thyme
- 1 clove garlic, lightly crushed
- 1 tbsp butter
For the red wine jus:
- 250 ml game stock
- 100 ml full-bodied red wine (e.g. Shiraz or Merlot)
- 1 tbsp cranberries
- 1 tbsp cold butter
- Salt, pepper
For the celery purée:
- 1 small celeriac (approx. 400 g)
- 1 potato
- 200 ml milk
- 1 tbsp butter
- Nutmeg, salt, pepper
For the cranberry shallots:
- 4 shallots
- 1 tbsp butter
- 1 tsp sugar
- 2 tbsp cranberries (from a jar)
- A splash of balsamic vinegar
Preparation
Prepare the venison:
Season the meat with salt and pepper. Sear it all around in a hot pan with olive oil. Add herbs, garlic, and butter, then continue cooking over medium heat for about 5–6 minutes, basting regularly with the melted butter. Let the meat rest in the oven at 120 °C for about 10 minutes.
Red wine jus:
Deglaze the pan with red wine, bring to a boil, and reduce by half. Add the game stock and cranberries, then simmer for another 10 minutes. Whisk in the cold butter and season with salt and pepper.
Celery purée:
Peel the celery and potato, cut into pieces, and cook in milk until soft. Drain, add butter, and purée until smooth. Season with salt, pepper, and nutmeg.
Cranberry shallots:
Halve the shallots and sauté them in butter until translucent. Add sugar and allow to caramelize lightly, then stir in the cranberries and balsamic vinegar. Reduce briefly until a glossy sweet-sour sauce forms.
To serve:
