Vinifikation It took almost 10 years for this dream to come true, a dream shaped by the reality of farming in the Swartland, its droughts, our love for a particular wine, the Elpidios. Diversity and recognition over time, we share this dream with the Swartland, where in 2017 we first made Grenache the leading grape variety in Elpidios. Grapes from seven different vineyards are used. 30 - 50% whole grape clusters are sorted and then placed at the bottom of an open tank. The remaining grapes are sorted, destemmed, but not crushed, and added to the tank on top of the whole grapes. Spontaneous fermentation takes place in the tank, and we allow for maximum extended skin contact (approximately 4 weeks in total). The grapes are gently pressed and transferred to old French oak barrels (300 L and 2300 L) for malolactic fermentation. Bottled after 12 months in barrel and matured for 18 months in the bottle.
