Vinifikation The vines are grown on the west-north-west facing slopes of the majestic Helderberg Mountain on the southern side of Stellenbosch. The slow ripening of the fruit on the 13-year-old vines is due to being situated only 7 km from False Bay and 300 m above sea level. The granitic soils have clay in the subsoil, which promotes moisture retention. This results in small berries that are concentrated in flavour and tannin. The canopy is managed to withstand the onslaught of the cool south-easterly wind during ripening and allows the grapes to develop colour and flavour evenly during the cool, slow ripening cycle. The grapes were hand-picked, destemmed, and individually sorted to ensure only the fruit with the best colour and size was selected. Fermentation took place in stainless steel fermenters over a period of 24 days, and the wine was then aged for 26 months in 70% new French oak barrels. The barrel selection was made to achieve the perfect blend of the original single vineyard.
