Vinifikation Hemelrand is located on the windy, cold Hemel & Aarde Ridge at 360 meters above sea level, on gravelly clay and sandstone soils. The vineyard was planted in 2010 with Chardonnay, Roussanne, Verdelho, Chenin blanc, and Muscat Blanc à petits grains. However, as previously mentioned, the proportions of the different grapes produced vary significantly from year to year. Viticulturally, it is a marginal site, with the upper part showing slow ripening and high natural acidity. In this vintage, the Chenin Blanc, Verdelho, and Muscat were harvested on the same day and pressed as whole bunches, while the Chardonnay and Roussanne were vinified separately. The juice was settled very lightly and spontaneously fermented in old barrels of various sizes without any additives. Fermentation lasted about two months, with the exception of the Roussanne, which fermented for about 9 months as usual. The wine was aged on its lees for about 12 months and then stored in tank for another six months before bottling. A very simple, careful winemaking process.
