Vinifikation The Kanonkop Wine Estate is situated on the lower slopes of the Simonsberg Mountain in the Stellenbosch region of the Western Cape Province and falls within the so-called Simonsberg ward, generally regarded as the ‘red wine bowl’ of South Africa. This area has earned a reputation both locally and internationally as South Africa’s finest viticultural area. The 2017 Paul Sauer spent five days on the skins and matured for 24 months in new French oak barriques.
