Vinifikation The vineyards that provide the fruit for this wine are farmed across three impressively distinct Swartland sites. The first block of bush vines is situated on the foothills of the Paardeberg (at 290m elevation) and is deeply rooted in old, free-draining, decomposed granite soils. This site has a north-westerly aspect and contributes perfume, spice, and purity to the wine. The second vineyard is located in the heart of the Swartland and faces north. These bush vines are planted on Malmesbury Shale and iron-rich soils which provide striking structure, acidity, and minerality. The most significant vineyard is the western foot of the Kasteelberg at 340m above sea level. This slope comprises a shale outcrop, has a south-easterly aspect, and yields much structure and fruit depth. Damascene will be planting more Syrah vineyards in this site in 2023. This Swartland Syrah displays the typical concentration of low-yielding vineyards planted in Mediterranean climatic conditions. With this in mind, whole berry fermentation was employed to ensure the finished wine did not lack elegance. Between 50-75% of the fruit, depending on the parcel, was fermented as whole bunches. Fermentation took place in tulip-shaped concrete fermenters and two conical 1000L oak fermenters, with pump-overs limited to a maximum of two per day during the peak of fermentation. Two of the batches were submerged cap fermented to ensure a broader mouthfeel. All fermentations occurred spontaneously, using only naturally occurring yeasts. Malolactic conversion occurred spontaneously, after which the wine was matured for 11 months in 2000L Austrian oak foudres. The wine was bottled unfined to ensure a more complex and authentic expression of Syrah.
