Vinifikation Hand-picked grapes from a single vineyard within the Simonsberg-Paarl appellation, hand-sorted and then spontaneously fermented in 400l open-top oak barrels, while a small portion was inoculated and fermented in a small open-top stainless steel tank. After 4 weeks of skin maceration, the free-run juice was transferred to 225l new French oak barrels for 24 months. Each barrel was evaluated and carefully selected before the final cuvée was blended.
