Vinifikation Working closely with the grape growers in Swartland and Stellenbosch to obtain the best possible fruit at optimal ripeness and balance is the most important first step in making Rall wines. Vineyards are selected based on a combination of factors, but the two most important aspects are soil type and vine age. Currently, the fruit for both wines comes from 10 different vineyards, mainly in the Swartland region, with shale being the predominant soil type for the red wines. Gentle winemaking is only possible when the vines yield little and growth is balanced. Like the Chenin of the same name, this wine comes from only 2 vineyards around Riebeeks Rivier and the Kasteelberg regions in Swartland. A selection of Syrah from the most extreme shale sites. This also means that no acidification or addition of yeast or nutrients is necessary in the cellar. The red grape varieties are fermented as whole bunches with minimal forced extraction and left on the skins for about 2 months before being pressed in the same small basket press as the white wines. They are then transferred by hand into older French oak barrels and aged there for 22 months before being blended and bottled.
