Vinifikation The grapes originate from Langverwagt Farm in Kuils River on the outskirts of Stellenbosch. Decomposed granite soils overlooking Table Bay and False Bay, a perfect home for maritime Stellenbosch Syrah. Three parcels of vines, trellised and managed as a vertical shoot positioning system. The soils are lean, the vigour low and the grapes are scarce – a perfect recipe for a classically styled Syrah. All fruit is bunch sorted as whole bunches before spontaneous fermentation in conical foudres and open-top fermenters. 30% of the fruit is fermented underwater with regular aeration, the rest as a normal fermentation with 2-4 aerated pump-overs per day. After a 2-3 week extended maceration, the wine is pressed in the basket press and matured in old 500L barrels for 13 months. The wine then spends another 10 months in foudre before bottling.
