Vinifikation The grapes for this vintage come from parcels in the Swartland near Malmesbury, Upper Blaauwklippen and the Polkadraai Hills. They were harvested in the early morning hours, sorted in the vineyards and pressed as whole bunches. The juice was lightly settled and fermentation occurred spontaneously in old barrels of various sizes. Fermentation took approximately 2 months and the wine matured on its fine lees for about 12 months, then rested for another 6 months in tank without fining. Very simple, careful winemaking.
