Vinifikation The Pinot Noir vineyards in Altima (Elandskloof) are the only high-altitude Pinot Noir vineyards in South Africa that use the 'posted vine' (stok-by-paaltjie) method. The Pinot Noir vineyards in L'Ormarins are located on moderate to steep slopes at an elevation between 178-188m above sea level. The soils consist mainly of decomposed granite with alluvial sandy soils. The Chardonnay vineyards in Rooderust consist of decomposed shale with a higher proportion of clay in their composition. This soil type belongs to the Oakleaf soil group and is calcareous with excellent drainage and water retention properties. Both grape varieties of Anthonij Rupert L'Ormarins Brut Classique are pressed separately. The first fermentation then takes place in steel tanks. After the second fermentation in the bottle, the wine remains on its lees for 2-4 years before disgorgement. After disgorgement, the sparkling wine is aged in the bottle for another 3 months.
