Vinifikation The grapes come from Stellenbosch, two Helderberg plots providing freshness and acidity, and another plot from a warmer west-facing slope on Simonsberg for texture and structure in the wine. All three plots were harvested at different ripeness levels and vinified separately. The grapes were pressed as whole bunches and fermented in 228-liter French oak barrels. Further aging took place for 11 months in 33% new French barrels, which were rolled once a month. This was followed by a strict selection, and the wine was blended at the beginning of February.
