Vinifikation Whole cluster fermentation (also referred to as whole bunch fermentation) is used to varying degrees around the world in the production of Pinot Noir. Prior to the invention of destemmers, it was the original method of winemaking — whole, intact bunches were tipped, stems and all, into vessels in which fermentation took place. This has a profound impact on the wine’s aroma, texture and tannin. The higher the proportion of whole bunches, the greater the impact on the wine. The increased extraction of phenolic compounds from the stems lends the wine a delicacy that is often highlighted by a lighter, livelier expression of fruit.
