Vinifikation The grapes are harvested by hand in the early morning at 20-23.5 Oechsle. Vinification takes place under reductive conditions with the use of dry ice and carbon dioxide gas. The grapes are crushed, left on the skins for 5-8 hours, and then gently pressed. The juice is settled for 2 days, then racked and fermented with selected yeast strains at 11°C for 24 days. After fermentation, the wine matured on fine lees for another 4 months before bottling.
