Vinifikation The Cabernet Sauvignon is grown on low-yielding, predominantly decomposed granite soils with a clay-loam subsoil. The Merlot vineyards are planted on more clay-rich, but well-drained soils to ensure moisture absorption and availability for the vine roots well into the summer. In the Merlot vineyards, there are significant deposits of iron-rich laterite, which enhance the fruit definition and mineral profile of the wine. The Cabernet Franc vineyard is located on very well-drained, stony Vilafontes soil with approx. 20% clay, which is ideal for this varietal. The Petit Verdot is located on oak leaves on the northern side of the vineyard to ensure full phenolic ripeness. The Rubicon 2015 is an assemblage of 61% Cabernet Sauvignon, 23% Merlot, 12% Cabernet Franc, and 4% Petit Verdot. Each varietal was fermented separately before undergoing malolactic fermentation in 300L barrels, 66% new French Nevers and 44% second-fill barrels. After 9 months in barrel, the components were blended and returned to barrel for another 9 months before bottling.
