Vinifikation As with all of Chris and Suzaan Alheit's wines, intervention in the cellar is kept to a minimum. All wines are spontaneously fermented and bottled unfiltered and unfined. Maturation takes place in used large French barrels (foudres). "Cartology" is the English term for the science of studying maps. Accordingly, the concept of this wine is to discover the Cape heritage by enjoying this wine. It represents a picture of the Cape, seen through the lens of its mature vineyards in a particular vintage. Therefore, the blend consists of Chenin Blanc and Semillon grapes, both of which have been cultivated in South Africa for centuries. They come from 30 to 40-year-old bush vines from excellent sites, composed as follows: 35% Skurfberg, 31% Perdeberg, 12% Bottelary Hills, 10% Kasteelberg (Chenin Blanc) and 12% in Franschhoek (a very old Semillon vineyard).
