Vinifikation Danie Malan is a fifth-generation winemaker at Allesverloren and loves to bring out the varietal aromas of the grape types. His passion lies particularly with red wines. The family winery Allesverloren is located approximately 100 km northeast of Cape Town on the southeastern foothills of the great Kasteelberg in the beautiful Riebeek Valley. The grapes for this Cabernet grow in the Riebeekberg area on Malmesbury slate. In this warm region with low rainfall, the refreshing westerly winds are an important aspect for high-quality wine production. A small portion of the vineyards (20%) are protected from excessive stress by drip irrigation. This is complemented by professional vineyard management and low yields achieved through green harvesting of the grapes in early summer. Harvesting is done by hand at the end of February, when the complexity of the aromas in the grapes is at its highest, the tannins are ripe, but the individual berries are still firm. Each vineyard is vinified separately. In the cellar, fermentation takes place on the skins for 7 days under temperature control. The Cabernet then matures for 18 months in oak barrels, with 30% being first-fill and 70% second-fill. Year after year, Danie Malan crafts an authentic Cabernet Sauvignon characterized by its unmistakable varietal character, its Swartland origin in South Africa, and, of course, his personal touch.
