Vinifikation The grapes were hand-picked and hand-sorted with the utmost care, and completely destemmed upon arrival at the winery. The berries then underwent a cold soak in traditional concrete tanks, after which fermentation began, partly spontaneously and partly through the use of selected yeasts. After the alcoholic fermentation was complete, malolactic fermentation followed in French barriques with a capacity of 225 liters per barrel. The wine then matured in French oak barrels from Sylvain and Saury.
