Vinifikation The grapes for the Kottabos all come from the Polkadraai Hills in Stellenbosch. The area is full of granite and iron-rich soils and is close to the False Bay Ocean. Both Grenache and Syrah grapes are grown on decomposed granite soils. The Grenache was fermented as whole bunches and aged in old French oak barrels for 10 months before being blended with the Syrah. The Syrah was aged in stainless steel tanks for 10 months to preserve freshness.
