Vinifikation A total of seven vineyards from the estate, planted on both decomposed shale and Table Mountain sandstone, contribute to this wine. Early-picked grapes provide a fresh backbone to the assemblage, while riper grapes impart a flavourful and mouth-filling generosity to the wine. Semillon, a traditional blending partner to Sauvignon Blanc, plays an important role in softening the racier edges and contributes to the ageing potential. In this vintage, the Semillon is predominantly fermented in old oak barrels, with a portion undergoing malolactic fermentation to enhance palate breadth and texture. A range of vineyards, mostly planted with clones SB11, SB316 and SB317, contribute to this wine. Further aromatic complexity is achieved through the use of a range of yeast strains, each selected for a range of fermentation conditions. Bottled in June 2023.
