Ginger and sourdough unfold on the nose, along with pineapple, peach tea, and a hint of vanilla bean. Rich texture, stone fruit with lively, tropical nuances. On the mid-palate, apricot notes balance the creamy, salty yeast. The acidity is thoroughly fine and mineral, along a seam of subtle spice. Quince, peach, and poached pear flow through to the finish with fruity generosity.

Vinifikation From old Chenin Blanc vines (1985) grown on decomposed slate and granite; winemaking was kept to a minimum to allow the stony terroir to shine through in the wine. The grapes were hand-picked in several stages to achieve optimal ripeness and balance. The fruit was pre-chilled and gently pressed before spontaneous fermentation and partial malolactic fermentation. Matured for 11 months in 500-litre French oak barrels and a further eight months on the lees in 2000L Stockinger foudre. After bottling, the Old Vine matured for another six months in the bottle.
