A cheeky cascade of blackberries, shrouded in smoke, contrasts with the smell of the sea. An intoxication of juicy red fruits, like cherries and summer plums. The texture of blackcurrant pastilles and structured tannins is opposed by the juiciness of the acidity. Fruit and drinkability, this exuberance is underscored by spices and a cleverly dry finish.

Vinifikation Each varietal was harvested separately at varying stages. Grenache and Syrah were fermented as whole bunches, while Cinsault and Mourvèdre were destemmed. Each batch fermented separately in open-top fermenters with wild/natural yeasts. An extended maceration followed before the wine was pressed and transferred to 500L and 300L barrels for malolactic fermentation. The wine spent a further 8 months in barrel before finally being blended and bottled.
