Vinifikation The grapes for the Buiten Blanc come from vineyards in Constantia, Durbanville, and Somerset West. After harvesting, the grapes were macerated on the skins in stainless steel tanks for 12 hours. Subsequently, alcoholic fermentation was initiated using 5 yeast strains, lasting approximately 21 days at 16°C. After pressing, the wine matured on its lees before being bottled.
