Vinifikation Rooted in deep granite soils and cooled by gentle sea breezes, Buitenverwachting produces an outstanding Sauvignon Blanc. The grapes were harvested between February and March. The berries were macerated on the skins for 12 hours before pressing. The must was fermented for 21 days at 12-16 °C. Further aging took place on the lees in stainless steel tanks before this white wine was bottled.
