The nose is intense and inviting with a range of pure, rich forest fruits, perfume and a subtle hint of exotic spices. Aromas of boysenberry, mulberry, blackberry, sour cherry, rose petal, red licorice and smoke contribute to a wonderfully complex bouquet. The palate offers concentration and generous flavors of plum, black cherry, espresso, cinnamon and star anise. The wine is medium-bodied and richly textured, with seamless, very fine-grained and soft tannins. The palate is full and dark, yet silky, vibrant and concentrated, with a soft, rich berry character and balanced acidity. Black plum, sour cherry and sweet tobacco linger on a fresh, juicy finish with notes of graphite, nutmeg and dark chocolate.

Vinifikation The Hemel-en-Aarde Valley is one of the most interesting places for growing Chardonnay and Pinot Noir in South Africa. Cap Maritime is perched on a ridge that separates the Upper Hemel-en-Aarde appellation from the Valley. Here, we strive to create wines that capture the essence of their origin while representing a style we aspire to. The Pinot Noir was harvested, sorted into small crates, and transported in refrigerated trucks to our winery in Franschhoek. At the winery, a meticulous triage (selection) took place to ensure that only healthy whole berries were placed into the concrete fermentation tanks. Most of the grapes were destemmed, leaving approximately 20% whole cluster, with no additions made. After spontaneous fermentation, 60% of the juice was transferred to Stockinger 2,500-liter foudres and 40% to new French oak barriques, where they matured for up to 14 months, including an extended malolactic fermentation at low temperatures.
