Vinifikation Altima is situated in Elandskloof, an isolated valley north of Villiersdorp, 5km wide and surrounded by steep mountains rising 1km from the valley floor. This steep topography causes the valley to receive less direct sunlight due to the overshadowing mountains, which, along with the altitude of 600-800m, results in a very cool climate for the valley. This particular terroir produces wines with high natural acidity. The harvest occurs much later than in other areas of the Western Cape, with picking typically beginning in early March. The vineyards produce an intense Sauvignon Blanc with a crisp expression of gooseberry, lemon, and freshly cut grass. Three different parcels were picked in multiple passes, each contributing a range of flavours from herbaceous green pepper to passion fruit, melon, and gooseberry. The grapes were hand-picked in small lug boxes in the early morning and transported to the cellar in refrigerated trucks. All the fruit was destemmed and crushed before an overnight skin maceration ensured maximum flavour extraction. The free-run juice from each parcel was inoculated with selected cultured yeast strains and fermented separately in stainless steel tanks. Thereafter, the wine matured on its fine lees for 3-5 months.
