Vinifikation The Cavalli estate is located in the Stellenbosch Wine Appellation on the road between Stellenbosch and Somerset West. Since opening 5 years ago, Cavalli has not only been a destination for good wine and excellent food, but also for its art and, as the name of the estate suggests, for horses. The estate's first-class equestrian facilities adorn the entrance to the estate as you drive up through the 100-hectare winery. Craig Barnard has been heading winemaking at Cavalli Estate since 2014, establishing the winery as one of the most dynamic young producers in the famous "Golden Triangle" of Stellenbosch wine lands. With his fifth harvest in the cellar, Barnard is firmly focused on Chenin Blanc and Cabernet Sauvignon. To choose the right time for Craig to harvest the grapes, regular vineyard tastings take place, as he likes to pick the grapes with good acidity, which he believes gives them "a bit of backbone". The Chenin Blanc is pressed as whole grape bunches, followed by fermentation in 225l French oak barrels with a combination of new, first fill, second fill and third fill. The wine remains on the lees for 9 months until bottling with occasional bâtonnage.
