Vinifikation Cavalli Wine & Vineyard's philosophy is to produce world-class wines with a strong local character and identity, to be unequivocally recognized as Helderberg, and at the same time to strive to be the benchmark in terms of terroir and quality for Helderberg in the years to come. We aim for our immediate environment to be reflected in the characteristics of our wines while maintaining sustainable farming practices to preserve the land, which belongs to the Cape Floral Kingdom, a UNESCO World Heritage site. This was achieved through a blend of Cabernet, Malbec, and Petit Verdot, all sourced from the Cavalli Estate. Each component was fermented separately in small batches, with manual punch-downs performed every 2 hours during fermentation. The skins were left on the wine for 3 weeks before pressing. Maturation took place in 225-liter French oak barrels with a composition of 40% new, 40% second, and 20% third fill.
