Vinifikation The grapes are hand-picked in the early morning at 23.5 Oechsle. Some of the grapes are pressed as whole bunches, while the rest are crushed and left on the skins. After settling, spontaneous fermentation takes place in 400l French oak barrels for the next 40-60 days under strict temperature control. The wine then ages on its fine lees for 10 months and is bottled without malolactic fermentation.
