Vinifikation A winemaker from Biel in the South African wine paradise - In 2002, Neuchâtel winemaker Jean-Claude "JC" Martin (formerly of Domaine les Grillettes) and his wife Carolyn, a South African with generations of winemaking ancestors, founded the "Creation Wines" winery near Hermanus. As a member of the Biodiversity & Wine Initiative, Creation Wines is committed to protecting and preserving natural biodiversity. The hand-picked grapes were gently crushed, and the resulting juice was then fermented at a controlled 20°Celsius in barrels. During the fermentation process, the wine was stirred every two weeks to achieve a richer and fuller mouthfeel. After alcoholic fermentation was complete, the wine matured for 10 months in French barriques, 30% of which were new wood and 70% second-fill wood.
