Vinifikation A Biel winemaker in the South African wine paradise - In 2002, Neuchâtel winemaker Jean-Claude "JC" Martin (formerly of Domaine les Grillettes) and his wife Carolyn, a South African with generations of winemaking ancestors, founded the "Creation Wines" winery near Hermanus. As a member of the Biodiversity & Wine Initiative, Creation Wines is committed to protecting and preserving natural biodiversity. Traditional mash fermentation, followed by malolactic fermentation in barrels. Light filtration before bottling. Aged for 16 months in 33% new French oak barrels.
