On the palate, it is cool in structure, with chalky yet firm tannins and perfectly integrated, barely perceptible yet guiding acidity. It is full-bodied, balanced, and elegant. Vinifikation A Biel vintner in the South African wine paradise - In 2002, Neuchâtel vintner Jean-Claude "JC" Martin (formerly of Domaine les Grillettes), together with his wife Carolyn, a South African with generations of winemaking ancestors, founded the "Creation Wines" winery near Hermanus. As a member of the Biodiversity & Wine Initiative, Creation Wines is committed to protecting and preserving natural biodiversity. The Art is a vineyard and barrel selection, traditional mash fermentation with extended post-fermentation maceration, followed by malolactic fermentation in the barrels. Two to three rackings during maturation and light filtration preceded bottling. Matured for 12 months in 50% new French oak barrels.
