Vinifikation The fruit for this vintage was picked from an esteemed old vineyard in the Franschhoek Valley. Planted in 1942 and 1962, on alluvial soils of decomposed Table Mountain sandstone, a portion - around 15 percent - of the bush vines has naturally mutated to Semillon Gris. Both variants were harvested and co-fermented for added complexity in the wine. The grapes were picked on 4 February 2020, sorted, and pressed using a gentle Champagne cycle without enzymes and with minimal sulfur. Settling occurred overnight, and spontaneous fermentation took place in tanks using naturally occurring yeasts. After about one-third of the fermentation, the must was transferred to second- and third-fill French oak barriques and then aged for 11 months. There was no bâtonnage, and malolactic conversion was prevented to ensure the wine retained its excellent natural acidity.
