Endlessly floral, with notes of green pear and citrus, alongside white pepper, salt and white peach, showing a fine spiciness. A wine of immense tension and concentration, yet playful and nimble. Vinifikation
In the vineyard, David & Nadia strive for organic farming, and in the cellar, they work as naturally as possible. Ultimately, it's all about the soil and the vineyards. They believe in a pure, fresh, and natural style, where location and soil are at work with minimal viticultural influence. The Plat'bos was planted in 1981 right next to the Skaliekop vineyard on decomposed granite. On the Paardebosch farm, this vineyard contributes to both the main Chenin Blanc and the Aristargos and will continue to do so. David & Nadia have managed this vineyard since the winter of 2013, and it is a pillar in the granite approach for our white wines. It is harvested in the second half of January and is one of the earliest Chenin Blanc vineyards they both work with, planted on a north-facing slope. Plat'bos is the fourth wine to qualify for the Old Vine Project (OVP) seal. The grapes were picked and pressed as whole bunches. The juice was minimally sulfured and cooled before spontaneous fermentation. Subsequently, the Plat'bos underwent malolactic fermentation and matured in old 300-liter wooden barrels.
