Vinifikation High on Witzenberg Mountain, within reach of Ceres, at an altitude of 960 metres above sea level, this unique 'appellation' of South Africa enjoys a continental climate with frequent winter temperatures dropping below freezing. The cool night temperatures and hot daytime temperatures during the growing season lead to slower ripening and more concentrated fruit. The well-drained, yellow shale soils are often covered with a layer of snow in winter, providing the perfect conditions for the dormancy of the vines, a much-needed rest before the growing season. 30% of the hand-picked harvest was destemmed, while the remaining 70% was fermented as whole grape bunches. Before fermentation, the mash underwent a cold maceration for 4 days, then was inoculated with yeast to start fermentation. The must was gently pumped over twice daily using the aerated pump-over method to achieve better colour extraction and tannin development. After gentle basket pressing, the wine was transferred to new French oak barrels for malolactic fermentation before maturing for 13 months in a combination of new and older barrels.
