Vinifikation Untouched land in Elim with a specially selected vineyard for the production of this Shiraz. Careful vineyard management, cool maritime climate and soils ranging from shale and Koffieklip to decomposed granite and clay. All of this makes for a remarkable growing region. 30% of the grapes were fermented as whole bunches in open stainless steel tanks. The cap was regularly punched down to produce more robust tannins, more concentration in the fruit and an excellent structure. The wine matured for 13 months in used French oak barrels.
