Vinifikation
The Divas Chenin Blanc is selected from a special low-yielding parcel of vines planted in 1972 at DeMorgenzon. The vines are planted on decomposed granite soils at elevations of 250 to 300 metres above sea level. Proximity to False Bay provides cooling breezes during the warm summer months. The Divas is selected from the most balanced vines from this great old vineyard. In 2018, a mass selection of genetic material was collected from the Divas’ vines and sent for propagation. The progeny from these great old ladies will be planted in DeMorgenzon’s future plantings of Chenin Blanc to ensure a unique lineage for DeMorgenzon Chenin Blanc. The grapes were picked in the early mornings in two different passes from a specific section of the old vineyard. Fruit was chilled and then gently pressed as whole bunches and the juice was settled overnight without the use of seducing enzymes. Fermentation took place naturally in French oak barrels (40% new) using indigenous yeasts with no malolactic fermentation. The wine was matured for 10 months on its lees in barrel with no battonage, followed by further maturation in a concrete egg for 6 months before being bottled without filtration.
