Vinifikation The grapes for this Chardonnay were hand-picked with great care and then pressed as whole bunches. The juice obtained was filled into French oak barrels, where the fermentation process began naturally without any addition of commercial yeasts. 35% of the barrels used were new oak. After fermentation was complete, the wine matured on its lees for 11 months, after which a selection of the best barrels took place for further production. The selected barrels underwent a further three months of maturation and were then bottled and corked with minimal filtering.
