Vinifikation The grapes were picked at four different times to achieve optimum ripeness and balance in the wine. The grapes were hand-picked in the early morning hours and, upon arrival at the winery, immediately cooled down and then whole-bunch pressed. The juice was allowed to settle overnight and then naturally fermented in French oak barrels. 20% of the barrels used were new oak. After fermentation, the wine aged for ten months on its lees without bâtonnage.
