Vinifikation Our grapes are grown in a single 8-year-old, south-west-facing, unirrigated vineyard, located 255m above sea level in the south-eastern region of Elgin. The vines are planted in decomposed Bokkeveld shale, containing approximately 20% clay. Favourable winter conditions were followed by cooler temperatures and rainfall. This delayed ripening by almost two weeks, giving the grapes a unique character and imparting more complexity and flavour. Our philosophy is to interfere as little as possible, allowing the terroir to speak for itself. The grapes were hand-harvested on 3 March 2022 and taken directly to the press for gentle whole-bunch pressing. Fermentation took place in French oak barrels, 25% of which were new, and maturation on the fine lees lasted 10 months. No fining or filtration was performed before bottling. Only the best barrels were bottled
