This 2021 Soldaat has one of the brightest and most transparent colors to date. The same freshness suggested by the color continues in the wine, revealing aromas of crushed pomegranate and fresh cherries. Notably, the tannins are much grippier than expected, and although the wine is aromatically very present, it will benefit from a few more years in the bottle. Fermenting the Soldaat vineyard is a wonderful experience in the cellar, as the aromas and scents of red strawberries, cherries, and pomegranates fill the entire space; these and similar aromas are also found in the resulting wine.

Vinifikation The approximately 60-year-old un-irrigated vines grow at 708 meters above sea level on the weathered granite soils of Piekenierskloof, which played a strategically important role in the Boer Wars. This location near Citrusdal has emerged in recent years as *the* place in South Africa for the world's most widely planted red grape, Grenache. The Soldaat bears a purple wax capsule, the color of the highest military honor. A tribute to the wines of the Southern Rhône, but less massive and much more aromatic. Not as alcoholic as often, transparent in color. Grenache tends to overproduce, and in many ways its great former decline can be attributed to this fact. But when a vineyard matures and is planted in a less forgiving location with a lower fruit load, it can compete with the most elegant and refined red wines of the Mediterranean climate. The grapes are fermented in a concrete tank, 60% as whole clusters and 40% destemmed. Fermentation on the skins lasts about 30 days, after which the wine is pressed. The Soldaat is then aged for another 12 months in concrete tanks.
