The medium-bodied 2015 Merlot reflects a truly magnificent vintage that radiates excellent ripeness, freshness, and balance. This wine manages to balance juicy red fruits with a spicy complexity; a hint of tomato leaf, earth, tobacco, and plums is almost reminiscent of Bordeaux. On the palate, however, it is rather sweet-fruited and juicy, with cherries and strawberries in the foreground. The tannins are as soft as milk chocolate, supported by a vibrant acidity and a long finish. Perhaps the best vintage yet!

Vinifikation
The Merlot grapes grow on the warm, north-facing slopes of the Helderberg region within the Stellenbosch appellation. The Hutton Clovelly soils have a high gravel content, which gives the wine exceptional depth and fruitiness. The altitude of approximately 250 meters above sea level and the cooling influence of the Atlantic Ocean, just 15 kilometers away, extend the ripening period by up to 3 weeks, leading to beautiful phenolic ripeness. The grapes were hand-picked in the cool of the early morning. On the sorting table, all excess stems and inferior berries were carefully removed, and the grapes were gently destemmed. Fermentation took place in both 3-ton and 7-ton open-top stainless steel tanks. The must was manually pumped over and punched down 3 to 5 times a day to ensure maximum color extraction from the skins. After primary fermentation, the wine remained on the skins for a further 7 to 14 days before being pressed. Each individual component is matured separately for 14 months in 300-liter oak barrels before being blended and finally bottled.
