Vinifikation The vintage will be remembered as one of the driest and earliest in years, with a slightly smaller harvest promising exceptional wines. Good reserves were built up in the post-harvest period of April and May, after which leaf fall generally occurred at the right time. A cold, wet winter led to the accumulation of enough chilling units for complete dormancy breakdown, resulting in even budburst. Warm weather in August led to an earlier bud break, after which a warm, dry and windy summer kept vineyard growth in check and accelerated ripening by about two weeks. The dry weather also resulted in one of the healthiest seasons in recent years, with almost no losses due to disease or rot. With the usual heatwaves absent in most regions, cooler than usual weather in February was ideal for ripening and harvesting. Smaller berries as well as moderate temperatures during harvest time led to good colour and intense flavour in this year's red wines. Although slightly smaller, this was one of the best, if not the best, harvests in years. Our Cabernet Sauvignon vineyards are grown on the warm north-facing slopes of the Helderberg region within the Stellenbosch appellation. The Hutton Clovelly soils contain a high gravel content, which provides a rich mid-palate weight and exceptional depth and fruit purity. Five clones of Cabernet Sauvignon were used to produce this wine, with CS46C being our most common clonal selection. With an altitude of approximately 250 meters above sea level and the cooling influence of the Atlantic Ocean just 15 kilometres away, the ripening period is extended by up to 3 weeks, resulting in beautiful phenolic ripeness. The wine was aged for 18 months in 80% new 300 litre French oak barrels.
