Vinifikation The farm is situated in the foothills of Simonsberg in the Paarl region of the Western Cape and encompasses a variety of slopes. Of the currently 31 planted blocks, each is managed according to its own unique potential, respecting the natural cycles of the vines. A vineyard program is underway to plant five hectares per year, aiming for a total of 60 hectares, utilizing harder rootstocks and new varietal clone selections. Fermented in 10,000-liter open and closed stainless steel tanks with regular pump-overs for two weeks to extract color and tannins. The wine was then aged for 16 months in second-fill French oak barrels.
