Vinifikation Fermentation was initiated in 400L open-top oak vats and 4-ton open-top steel tanks. Half of the must was inoculated with yeast strains and the other half was spontaneously fermented. Free-run and press juice were kept separate, with only the most delicate wine being filled into 225L barrels for 24 months. Approximately 70% of the wine underwent malolactic fermentation.
