Vinifikation The grapes were gently pressed at low pressure to achieve a lighter color. The juice was transferred to a stainless steel tank where tannin was added to protect the wine instead of sulfur. Spontaneous fermentation (wild fermentation) took place without further additives. Fermentation in the tanks occurred at a cool temperature.
