The Cuvée Clive 2017 is a fascinating Cap Classique of great elegance, balance, and sophistication. The Chardonnay components seamlessly unite to form a bouquet of rich peach, apricot, apple, and citrus aromas, with alluring notes of spice and toasted almonds from the barrels. The Pinot Noir elegantly dances through these aromas, adding complexity on the palate with fresh cranberries, pomegranate, and spicy undertones. The palate is elegant and fresh, and the long time on the lees has created a succulent texture that lingers long after the last sip.

Vinifikation 40% of the blend comes from an exceptional Chardonnay block in Napier, near the Cape's south coast, while the remaining 20% of the Chardonnay originates from a single vineyard on the Robertson Estate. The Pinot Noir grows in Durbanville, on Table Mountain sandstone. In our state-of-the-art, custom-built Cap Classique cellar, the grapes were received in the early morning and whole-bunch pressed, with only the cuvée fraction (the first 400L per ton) considered for this magnificent Cap Classique. The Chardonnay was settled over a 24-hour period and then transferred directly into neutral pièce barrels (French oak) for primary fermentation and a short maturation of three months, while the Pinot Noir was fermented in stainless steel tanks. The components were then blended and bottled. After an exceptional 50 months of lees aging in the bottle, the Cuvée Clive was disgorged.
