Vinifikation The grapes for this Cap Classique were hand-selected from Chardonnay vines grown on the calcareous soils of our Robertson Estate. This ensures a low pH and high natural acidity in the young base wine, which is essential for the wine's longevity. Yields were between 8-10 t/ha. The Chardonnay was hand-picked and hand-sorted in the third week of January at 19.0 to 20.0° Oechsle. The grapes were transported in lug boxes to the cellar, where the whole bunches underwent a slow pressing process to extract the juice as gently as possible. Only the finest cuvée juice is selected for this MCC, and it rested for two days before being transferred to stainless steel tanks for fermentation at a controlled 15°C. A portion of the base wine was fermented in older barrels to ensure a creamy texture on the palate. Secondary fermentation in the bottle takes place on the lees for 60 months.
