Yin (a blend of 60% Pinot Noir and 40% Chardonnay) and its counterpart Yang (a blend of 60% Chardonnay and 40% Pinot Noir) celebrate life’s captivating and fascinating contrasts, proving that opposites can coexist and perfectly complement each other. Both blends highlight the unique and subtle interplay of these two grape varieties. Yin: After the first fermentation, the individual components matured on the lees for 4 months before being blended. The tirage bottling took place on July 27, 2016, and the wine was disgorged on August 20, 2021 – a total of five years of aging on the lees and in the bottle.
