Vinifikation All vineyards are located in the Stellenbosch coastal region, and the quality of the grapes is positively influenced by the cool southern sea breeze blowing over False Bay in summer. The Cabernet Sauvignon vineyard and one of the Merlot vineyards are trellised. The remaining Merlot and the Petit Verdot are bush vines. The grapes are hand-picked, sorted, and fermented in open fermenters with regular punch-downs. This was followed by extended skin maceration, and the wines were pressed in a wooden basket press. Malolactic fermentation took place in barriques, and the wine then matured in them for 35 months.
